Single Serving Double Chocolate Healthy Mug Cake

This healthy mug cake recipe is soft, warm, and oozing with melty chocolate.  It’s flourless,  ready in under 2 minutes, and comes in a perfect single serving size for your after dinner sweet tooth.

Imagine a world where you can have a warm, chocolatey, gooey dessert in less than two minutes and from the microwave (NO bowls or pots or pans to clean!). Now take it a step further – what if this dessert was healthy.  What if it was gluten free, dairy free, even vegan!?

Now you think I’m just messing with you right?  But I am not and this “world” is the here and now thanks to this single serving chocolate mug cake!

Let’s Make a Healthy Mug Cake!

I know quinoa flakes might be a new ingredient for you.  But I promise they are worth going out and getting! (You can get the ones I used here).  They add so much great protein to this recipe and help us avoid using ANY flour.  I haven’t tried this recipe with any swap for this but you could give almond or gluten free all purpose flour a try.  If you do please let me know how it turns out!

A couple swaps – If you want this recipe to be nut free, just switch out the cashew milk for oat milk.  And if you don’t eat apple sauce you can swap that out for some coconut oil (I’d use 1/4 cup).

Also – in full transparency, I split this between two of my mini ramekins so it was actually a two serving cake for me.  BUT  it can be easily made in one larger mug and eaten in a single sitting without any guilt because the ingredients are so good and it is not too much for one sitting!  I just didn’t have a big enough mug 🙂

Description

Gluten Free, Vegan, Refined Sugar Free

This healthy mug cake recipe is soft, warm, and oozing with melty chocolate.  It’s flourless,  ready in under 2 minutes, and comes in a perfect single serving size for your after dinner sweet tooth.


Ingredients

Scale
  • 1/3 cup quinoa flakes (I used these ones)
  • 2 tbsp cocoa or cacao powder
  • 1 tbsp ground flax seeds
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 cup apple sauce
  • 1 baby banana (or half a regular banana)
  • 1/4 cup milk of choice (I used cashew milk)
  • 2 tbsp mini dairy free chocolate chips

Instructions

  1. In a small mixing bowl, combine dry ingredients (first 6 from list).
  2. In another bowl, mash your banana and then add apple sauce and milk, stir until combined.
  3. Add wet ingredients to dry.
  4. Fold in chocolate chips.
  5. Let batter cool in fridge for 30 minutes.
  6. Pour batter in a microwave safe mug or dish (I used a small ramekin) and microwave for 1 minutes and 30 seconds.
  7. Optional: sprinkle more chocolate chips on top before microwaving! 

Notes

Refined Sugar Free – make sure the chocolate chips you use do not contain sugar to keep this recipe refined sugar free.  Check out my Amazon shop to see all of the brands and ingredients I use and recommend!
