Description

Gluten Free, Vegan, Refined Sugar Free

This healthy mug cake recipe is soft, warm, and oozing with melty chocolate.  It’s flourless,  ready in under 2 minutes, and comes in a perfect single serving size for your after dinner sweet tooth.


Ingredients

Scale
  • 1/3 cup quinoa flakes (I used these ones)
  • 2 tbsp cocoa or cacao powder
  • 1 tbsp ground flax seeds
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 cup apple sauce
  • 1 baby banana (or half a regular banana)
  • 1/4 cup milk of choice (I used cashew milk)
  • 2 tbsp mini dairy free chocolate chips


Instructions

  1. In a small mixing bowl, combine dry ingredients (first 6 from list).
  2. In another bowl, mash your banana and then add apple sauce and milk, stir until combined.
  3. Add wet ingredients to dry.
  4. Fold in chocolate chips.
  5. Let batter cool in fridge for 30 minutes.
  6. Pour batter in a microwave safe mug or dish (I used a small ramekin) and microwave for 1 minutes and 30 seconds.
  7. Optional: sprinkle more chocolate chips on top before microwaving! 

Notes

Refined Sugar Free – make sure the chocolate chips you use do not contain sugar to keep this recipe refined sugar free.  Check out my Amazon shop to see all of the brands and ingredients I use and recommend!
