Frost your favorite baked goods with a creamy buttercream-like chocolate frosting that no one will ever guess was made with vegetables and no refined sugar.
Oh. my. gosh. That is all I have to say about this recipe. This frosting is pure chocolatey HEAVEN. Like I am talking I ate my entire first batch straight from the spoon because I didn’t even have any baked goods to eat it with and I couldn’t wait 😛 THAT good.
Frosting is my jam. As a kid my sister and I would always share slices of cake. She ate the cake, I just took all the frosting. So you could say I am obsessed. Unfortunately store bought frostings are mostly just sugar. No bueno. So I have now made it my mission to come out with as many healthy DELICIOUS frosting recipes as I can. It is a work in progress but for now be sure to check out my Healthy Five Ingredient Chocolate Frosting– which is also sweet potato based but has some ingredients that make it a little lighter than this one so it is a great option when you don’t want something so buttercream-y, my COFFEE protein frosting, and I even have a fun CBD frosting.
What kind of frosting would you like to see me make next? Leave your ideas in the comments so I can make your dreams come true!
The key for this recipe is doing everything while the sweet potato is still hot. So I recommend skinning it before baking it. This will allow you to keep the entire amount of flesh (rather than trying to scoop it out and burning your hands while doing so) and make it easier! Your efforts will be well rewarded as you watch your chocolate and coconut oil melt into gooey greatness inside your food processor. I promise.
I use maple syrup in this recipe but you could easily use another sticky sweetener like agave syrup, date nectar, or even honey (if you aren’t vegan). You could also probably use Stevia because I don’t think we need the extra liquid here – but I haven’t tried it with that yet! If you do, let me know.
Check out my Amazon shop so you can see all the baking ingredients and brands that I recommend to make your frosting the best it can be!
And if you need a quick idea of something to top with this – I recommend my chocolate zucchini brownies, my quinoa chocolate chip cookies, or my vegan banana bread!
What will you use it with??
