Granola Crusted French Toast

This granola crusted french toast recipe is soft on the inside, crunchy on the outside, perfectly sweet but in a healthier way and takes your favorite breakfast up a notch both in flavor and in nutrition!

Granola and french toast.  Each are so great by themselves, so when you combine them into this HEALTHY granola crusted french toast recipe they are of course going to be mind blowing. This may just be the greatest breakfast recipe ever created.  I may be biased but yall this one is good!  It is even husband approved, and Neil normally opts for savory breakfasts (like my BACON breakfast pie or my egg muffins, so that is when you know it is really a great one!

Plus it is dairy free, and can be made gluten free if you choose a gluten free brand of bread and granola!

Let’s Make This Granola Crusted French Toast Recipe!

I used Michele’s Granola Almond Butter flavor for my batch.  While not certified gluten free, oats are naturally gluten free.  So really the only possible gluten in any oat comes from cross contamination during processing.  While I am NOT saying if you have Celiac’s this is an okay risk to take, but if you are simply trying to avoid gluten this won’t kill your efforts.

I love Michele’s Granola!  Every single flavor I have tried I love.  The almond butter is great but my other favorite is their Ginger Hemp (I top all my smoothie bowls with it!) and a new one I recently tried and might be the winner for me is their Cinnamon Raisin.

You can use any milk you like, I just prefer cashew.  Just be sure to use a dairy free one if that is important to you and if you want this recipe to be nut free you can use oat milk!

Also in my notes below you will see that I have an update where I recommend baking at 350F instead of 250F.  That is because we tried the higher temperature when we made this a second time and liked how it made the french toast crispier.  But that is up to your personal preference!

Dairy Free, Gluten Free Option, Refined Sugar Free Option

This granola crusted french toast recipe is soft on the inside, crunchy on the outside, perfectly sweet but in a healthier way and takes your favorite breakfast up a notch both in flavor and in nutrition!


Ingredients

Scale
  • 4 slices of bread (I used Angelic Bakehouse raisin wheat)
  • 2 eggs
  • 1/3 cup cashew milk
  • dash of salt
  • 1/4 tsp cinnamon
  • 1/2 cup granola (I used this one)

Instructions

  1. Preheat oven to 250F.
  2. Whisk eggs and milk together in a bowl (that the bread slices will fit in laying down), and set aside.
  3. In another bowl mix granola and cinnamon (better to use small pieces of granola rather than large chunks).
  4. Take each slice of bread and submerge in egg mix.
  5. Pat one side of the bread into granola mixture (can do both sides if you want but you might need more granola!)
  6. Once granola is adhered well to bread, place on skillet granola side up.
  7. Pan fry on stove top over medium/high heat for about 3-5 minutes on each slice to brown that side.  Note: do NOT place granola side down on skillet – it will burn.
  8. Move bread slices to a greased cookie sheet lined with aluminum foil.
  9. Bake 15 minutes.

Notes

Update – The second time we made this we cooked at 350F instead and it got a nice little crisp to the toast.  I think I preferred this better but if you like your traditional french toast (which is not usually crispy) then keep it at 250F!
