Okay raise your hand if you love apples and cinnamon in the fall time. I am raising both my arms and both my legs. While I do love a good pumpkin treat every now and then, apple cinnamon is definitely my jam come fall time (truly all year round if I am being honest. And this apple crisp is no exception! Inspired by my single serve spiced peach crisp, I use a granola topping to make it extra crispy (and it is a great use of the end of a granola batch because you can use all the little pieces!) and a simple filling made with just a few ingredients that is just OH SO GOOD. I promise this is a recipe that you are going to want to make again and again! That is why I made it single serve, I knew I’d have no self control 🙂

Let’s Make An Apple Crisp For One! (or maybe for two ;P )
So you are ready to go to dessert heaven. Great! I will start by saying you can make this as a single serve and follow the instructions below, or just double all of the ingredients and make it for two! (or you know, a larger serving for yourself 😉 )
For this recipe just start with your favorite kind of apple. I am a big proponent of honeycrisp. You can peel the apple if you want, but I don’t bother. I don’t think it affects it much, plus it saves me some time AND it keeps that good fiber in there. An overall win. But you do you.
You are just going to mix all your filling ingredients together, all your topping ingredients together, combine, and bake!
You can use regular sugar if you don’t have coconut sugar and that is totally fine. And you can swap the spices out for an apple pie spice if you have that on hand BUT I wouldn’t swap the coconut flour for another flour. Coconut flour is just so different than the rest and it has a nice subtle sweet taste that is really great for this recipe.
If you want this to be gluten free, be sure to use a gluten free granola. Get one that is crispy, that is the fun part about this topping is it is extra crispy because instead of just using oats we use granola which is already crispy! And it is a great way to use the end of a granola bag because the little pieces actually work better than the big chunks.

Ingredients
Filling:
- 3/4 cup sliced apple
- 1 tbsp coconut sugar
- 1/2 tbsp coconut flour
- 1/4 tsp cinnamon*
- 1/8 tsp nutmeg*
- splash of vanilla
Topping:
- 1/4 cup granola
- 1 tbsp vegan butter
- 1/2 tbsp coconut sugar
- 1/2 tbsp coconut flour
- 1/4 tsp cinnamon
- dash of salt
Instructions
- Dice your apples into thin slices/small cubes (you can peel them first but I like to just leave the skins on!). In a small bowl, combine with the rest of the filling ingredients and transfer to an oven safe dish (I used a small 7 oz ramekin).
- In a separate bowl, combine all of your topping ingredients (microwave the butter first). Stir until evenly coated with spices and with butter.
- Top your filling with your granola mixture.
- Bake at 375F for 30 minutes.
Notes
*OR you can do a heaping 1/4 tsp of apple pie spice
Use a gluten free granola to keep this gluten free
Just double the recipe to make it for two! I used a 7oz ramekin for the single serve, and a 16oz ramekin for the sharing size 🙂
