Funfetti Mug Cake

A birthday cake you don’t have to share?  Coming right up! This funfetti mug cake is perfect whether you are celebrating a birthday or finishing up a day of work.  It’s made with almond flour and sweetened with coconut sugar so it is healthy too!

Funfetti is my FAVORITE.  I already talked all about how I wanted one for my wedding in my funfetti french toast post, so I won’t bore you again 😛 but it really is just such a fun flavor that will forever make me feel like a little kid.  And I love that about it!

But I also love making it healthier, because while we all know whatever they put inside that box mix is magic, we also know it isn’t quite something we want to indulge in every single day.  So that brings me to this mug cake!  It has been on repeat for dessert in my house and my favorite part is it is single serve so I don’t have to share!

Let’s Make a Funfetti Mug Cake!

Okay this is super simple but all I gotta say is that you need to use almond flour.  I tried this like seven hundred different ways using gluten free all purpose and it got really gummy every time.  No bueno.  If you have any secrets for microwaving with all purpose flour let me know but I couldn’t make it work with this one 😛

Also – go ahead and get yourself some almond extract.  It really makes the “cake batter” flavor to the funfetti.  I was reluctant for a while but it is not expensive and it is a game changer!  You will thank yourself.

Other than that this is easy peasy.  Just make sure your mug or bowl is microwave safe, and use as many sprinkles as your heart desires!

A birthday cake you don’t have to share?  Coming right up! This funfetti mug cake is perfect whether you are celebrating a birthday or finishing up a day of work.  It’s made with almond flour and sweetened with coconut sugar so it is healthy too!


Ingredients

Scale
  • 3 tbsp almond flour
  • 1 egg
  • 1 tbsp coconut sugar
  • 1/2 tsp almond extract
  • 1 tbsp almond milk
  • 1/4 tsp baking powder
  • dash of salt
  • rainbow sprinkles (as many as you want!)

Instructions

  1. Mix the egg, almond extract, and milk together in your bowl until combined.
  2. Stir in your dry ingredients.
  3. Microwave for 90 seconds until fluffy (but not too long!).

    • Hi! Thank you so much for wanting to try. I am sorry for any inconvenience, I don’t track calories and such in my recipes because it was something that used to be a trigger for me (I have a history of disordered eating) so I focus more on just using quality ingredients!
