These quinoa cookies are fluffy and soft, filled with chocolate chips, and are healthy enough to eat for breakfast! They are gluten free, vegan, and made healthier with protein packed quinoa and no refined sugar.
When a cookie tastes this good and it is healthy enough to have for BREAKFAST, you know it is a winner! I actually thought about calling these breakfast cookies but at last minute didn’t, so just know you really can eat them for breakfast.
Let’s Make Some Quinoa Cookies!
In this recipe, I make my own oat flour. It’s really easy and saves me from buying and storing yet another ingredient. But if you already have oat flour, feel free to use that instead! I explain the process briefly below, but for a full tutorial, check out my post here.
As for chilling the dough, you can skip this step if you’re short on time. I’ve been experimenting with it after learning that chilling dough can improve cookie texture, but I haven’t tested this recipe without chilling. If you’re feeling impatient, try skipping it and let me know how it turns out!
Other than that, the recipe is pretty straightforward, so go ahead and enjoy!
