Single Serve Spiced Peach Crisp

No better way to celebrate summer than with some fresh Georgia peaches.  Except maybe spicing them up, adding a crispy granola topping, and serving warm with a fresh scoop of ice cream.

I am ALL about some great peaches come summertime.  I have my easy baked peach dessert you can check out, and I have a bunch more recipes in the works I am excited to share with you.  And considering there is not much better than a great healthy take on fruit crisp (like my clean eating apple crisp) I thought no better way than to marry the two!  And add some fun spices to take it up a notch.

I decided to make this a single serve recipe because I have a huge sweet tooth, therefore most desserts in my house become a single serve dessert regardless of how big they are.  So to keep myself controlled I thought I’d make this one small.  But you can easily double, triple, etc, the recipe to serve as many people as you want!  And if you have the same sweet tooth problem as I do, you should check out my single serve double chocolate mug cake for a day you want a chocolatey dessert.

I made sure to keep the ingredients clean on this too – because that is what I do!  These are gluten free if you use gluten free granola – like Purely Elizabeth or Safe & Fair (use code DONUT20 for 20% off at Safe & Fair!), and are also refined sugar free!  I do use some butter so it is not dairy free, but don’t let that scare you off.  Contrary to popular belief butter CAN be a part of a healthy diet.  Just buy pasture raised brands! You need fats in your diet! And this only uses a tablespoon.

Now this isn’t your average crisp.  I added nutmeg and cinnamon to the filling to make it spiced and wow it really adds something extra!  You  can definitely make it without these if you want, but I tried it both ways and I highly recommend sticking to the recipe below.

Instead of just using oats I decided to take my topping up a notch too.  I used Michele’s Granola, one of my favorite brands, and I used their original flavor.  It is a great way to use the leftover granola after you have eaten all the big chunks out!  You can use any granola you want to but this brand is really a great one! (however warning – it is not gluten free!)

Last but definitely not least, I served mine with a scoop of dairy free gelato from Revolution Gelato.  They are a local Atlanta company but they do mail their products!  You can find them on Amazon or their site.  I used their cardamom spice flavor and it was the perfect addition to this already spiced crisp!

Gluten Free Option, Refined Sugar Free

No better way to celebrate summer than with some fresh Georgia peaches.  Except maybe spicing them up, adding a crispy granola topping, and serving warm with a fresh scoop of ice cream.


Ingredients

Peach Filling:

  • 1 cup sliced peaches (about 1.5 small peaches)
  • 1 tbsp coconut sugar
  • 1 tsp coconut flour
  • 1/8 tsp nutmeg
  • 1/4 tsp cinnamon
  • splash of vanilla

Crisp Topping:

  • 1/4 cup granola (I used this one)
  • 1 tbsp coconut flour
  • 1 tsp coconut sugar
  • 1 tbsp unsalted butter, melted
  • dash of cinnamon
  • dash of sea salt

Instructions

Peach Filling:

  1. Slice your peach (I did not remove the skins).
  2. Combine all  ingredients in a bowl and stir until combined, pour into baking dish (I used a 7 oz ramekin).

Crisp Topping:

  1. In a separate bowl, combine all ingredients except butter, stir to combine.
  2. Melt butter in microwave, pour into the rest of the ingredients and stir until combined (do not over stir – you want it to be clumpy!)
  3. Pour topping over peach filling.
  4. Bake for 30 minutes at 375F, until granola on top is golden brown.
  5. Serve as is, or with a scoop of your favorite ice cream!

Notes

The granola I used is not certified gluten free.  If you want this recipe to be gluten free I recommend swapping it for this granola, or this one (see text above for discount code).
