Description

Gluten Free, Dairy Free, Refined Sugar Free

This dessert pizza is made from a chewy & soft chocolate coconut crust, topped with a coconut cream nut butter frosting, and piled high with chocolate sauce, nut butter, and all your favorite toppings!  Made healthier using cauliflower rice in the crust, no refined sugar, and all gluten free ingredients.


Ingredients

Crust:

  • 1/2 cup cauliflower rice
  • 1/4 cup coconut flour
  • 2 tbsp shredded coconut (unsweetened)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup dark chocolate melting wafers (I used these ones)
  • 2 tbsp agave
  • 1/4 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat oven to 400F.
  2. Measure out, and cook the cauliflower rice:
    1. if using a bag of pre-riced cauliflower, cook according to directions and then measure, set aside rest for another recipe (like this one!)
    2. if using a head of cauliflower you riced, rice first and then measure out.  Put your rice in a small bowl with a little water, cover with a damp paper towel, and microwave for a couple minutes.
  3. Pat cauliflower until it is as dry as you can get it, transfer to a mixing bowl.
  4. Add your coconut flour, shredded coconut, salt, and cinnamon to the bowl of riced cauliflower and stir to combine.
  5. In another, microwave safe,  Microwave chocolate until melted (about 1 minute) and stir.
  6. Add your agave and vanilla to your chocolate mixture, and stir until combined.
  7. Add your chocolate mixture to your bowl of dry ingredients, add your egg, and stir until a dough-like texture has formed.
  8. Take your dough and put it on a cookie sheet covered in parchment paper, creating a flat circle (about 1/4 inch thick) in the middle of a pan (like a pizza crust would look!).
  9. Cook for about 20-25 minutes until edges are golden brown.
  10. Top with coconut cream frosting – or find other suggestions above in the post!

Notes

Toppings are completely up to you!  I just shared what I used 🙂

Vegan Option – swap out the egg for an egg replcement like Neat Egg (disclaimer – I have not tried this yet).
