Frosting has become one of my favorite things to make. Is that weird? Well I have alwayssss been a frosting girl. When I was younger my sister and I would always split slices of cake and she’d eat the actual cake and, you guessed it, I just scooped off all the frosting 😛 Even now my friends always try to give me their extra frosting and while that usually doesn’t end well for my stomach, when it is a frosting made like this one it doesn’t matter – no weird ingredients or sugar rush here! This coconut cream frosting is made with only THREE ingredients – nut butter, coconut cream, and a little stevia – meaning it is high in healthy fats, naturally sweet, contains no refined sugar, is vegan and gluten free, and is so easy to make!

Let’s Make Some Coconut Cream Frosting!
This recipe could not be simpler. My first recommendation is to refrigerate your coconut cream overnight. It just helps separate the more liquidy part from the cream, and helps keep the cream thicker. Not necessary if you are on a time crunch though! But do be careful when you open it. You are going to just use the thick creamy part, don’t mix in the liquid. Keep that for another recipe (anything you’d use coconut milk in!).
And if you don’t want any sweetener in this, I think you could forgo the Stevia. Just know that if you do your frosting won’t be very sweet. It will have a little natural sweetness from the nut butter and coconut cream, but the Stevia helps make it taste more dessert like! You could sub for coconut sugar or regular cane sugar but I wouldn’t use a liquid sweetener – you don’t want your frosting to become runny.
Lastly, if you have a whisk I’d use that to add some extra fluff to the frosting, but mixing with a fork will work too. And if you think it gets too soft just refrigerate again before topping your cake with it!
In addition to the listed ingredients you will need:
- a bowl and something to mix with and that’s it!
Now if that isn’t the easiest frosting recipe you’ve ever seen I don’t know what is! Perfect to keep you away from the store bought options!
