Everything Cauliflower Bagels

These gluten-free everything cauliflower bagels are made with cauliflower rice and topped with the everything bagel seasoning. Basically, it’s everything you could ever want in a morning (or midnight!) snack.

Why Cauliflower?

So you may be thinking, if it ain’t broke don’t fix it.  And I know how much everyone loves traditional bagels (my family is from New Jersey and all my dad talks about is how great the bagels are).  But in line with the intention behind a lot of my recipes,  what I really love about using cauliflower rice in these is that it lightens them up. 

Usually when I eat a bagel I feel really heavy afterwards because they’re just so much bread.  But these don’t do that!  Plus it really makes the macros more exciting to me.  There are less carbs in these bagels compared to traditional bagels.  And while I am not one to avoid carbs, it is important to not start your day with only carbs.  So for a breakfast recipe, I am all about it.  The cauliflower rice and quinoa flour bring more protein, fiber, and vitamins to this bagel so that you get a little bit of everything and start your day more balanced!  That will keep you satisfied and full until lunch, while providing enough energy to get you through even the worst Monday morning.

Let’s Make Some Everything Cauliflower Bagels!

Whenever there is something particular about a recipe, or a good substitute you can make, I like to make sure I let you know!  So here are a few tips, tricks, and words of advice to make sure you get the best bagels ever!

  • For this recipe you want to make sure you dry out your cauliflower rice beforehand so it is not too watery.  Don’t worry about getting it completely dry.  A few good pats with a strong paper towel will do the trick!
  • I used quinoa flour in this recipe.  Honestly the main reason for this was a I saw it in Sprouts one day, thought it was really cool, and wanted to give it a try!  But I am sure you could sub out for your favorite flour (just maybe not pure coconut flour because of how particular it can be) and it will be just fine!  Let me know if you do!
  • It is important to let the bagels cool before removing them from the donut pans!  This will ensure your bagel comes out whole.  I know it’s hard to wait for these guys but I promise it is worth it!

Description

Gluten Free, Dairy Free

These bagels are soft and fluffy, made healthier using cauliflower rice and gluten free flours, made TASTIER using Everything But the Bagel seasoning to give you the perfect start to your day!


Ingredients

Scale
  • 1 cup dried cauliflower rice
  • 1/3 cup quinoa flour
  • 2 tbsp coconut flour
  • 2 eggs + 1 egg white
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Everything But the Bagel seasoning

Instructions

  1. Preheat oven to 400F.
  2. Mix all ingredients together in food processor and blend until dough consistency forms.
  3. Pour dough into greased donut pans.
  4. Bake for 20 minutes.
  5. Remove from oven, brush the top of each bagel with egg white, sprinkle with Everything But The Bagel seasoning, and bake for an additional five minutes.
  6. Let bagels cool before removing from pan.

  2. How can I make this without eggs?

    • I have not tried it without eggs so I can’t guarantee it will turn out the same, but you could always try with a vegan egg! Mix one tbsp of ground flax seeds with 3 tbsp of water, let it sit for a few minutes and thicken, and then mix that in with the rest of the ingredients! Let me know if you try!
