How Do I Save Leftovers?

Any leftovers should be refrigerated in an airtight container and will last at least 1 week. 

Tips:

  • Chopped pecans or walnuts can be substituted for peanuts for preference or those with allergies. Pistachios would be another delicious option.
  • Valentine’s sprinkles / decorations are optional, but add a fun, festive flair to the candy. You could also substitute colored marshmallows to add to the festivity.
  • Salted nuts taste better than unsalted nuts in this recipe.

Made with chocolate, nuts, and marshmallows, traditional Rocky Road Candy gets a festive twist with the addition of sprinkles! So easy to make, this recipe will quickly become a family favorite!


Ingredients

Scale
  • 12 oz semi-sweet chocolate chips
  • 2 tbsp butter
  • 14 oz sweetened condensed milk (1 can)
  • 2 1/2 cups dry roasted peanuts
  • 16 oz mini marshmallows
  • Valentine’s sprinkles/candy decorations of choice
 

Instructions

  1. Line a 13×9 pan with parchment or wax paper.
  2. Melt chocolate chips, butter and condensed milk in a medium to large saucepan over medium/low heat, stirring constantly to keep it from burning.
  3. Once melted, remove chocolate mixture from heat and allow to cool slightly.
  4. Stir peanuts and marshmallows into chocolate mixture. 
  5. Spread rocky road mixture into prepared pan and add Valentine’s sprinkles and/or candy decorations as desired.
  6. Chill until set, approximately 2 – 3 hours. Cut into squares and serve.
