Ingredients & Substitutions

  •  1 ½ cups 4% fat cottage cheese
  • 12-ounce bag of frozen fire-roasted corn, divided
  • ¼ cup mayonnaise (optional)
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Zest and juice of 2 medium limes
  • ½ teaspoon garlic powder
  • ½ teaspoon fine sea salt, more to taste
  • 2 tablespoons crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • Optional: hot sauce or finely diced jalapeño


Instructions

  1. Thaw the corn according to package directions. If using canned or plain frozen corn, cook in a dry skillet over medium-high heat for 5-6 minutes to roast slightly.
  2. Blend the cottage cheese in a food processor or blender until smooth and creamy.
  3. Add 1/4 cup thawed corn, mayonnaise (if using), chili powder, smoked paprika, lime juice, garlic powder, and salt.
  4. Blend again until mostly smooth but with some texture remaining.
  5. Transfer the mixture to a bowl and stir in the remaining corn, cotija cheese, and chopped cilantro.
  6. Taste and adjust seasoning, adding hot sauce or diced jalapeño if desired.
  7. Serve chilled or at room temperature, garnished with extra cheese, cilantro, or a drizzle of hot sauce
