Description
This healthy street corn dip blends cottage cheese with smoky corn, lime, and chili for a creamy, delicious dip. It’s ready in 15 minutes and it’s perfect for chips, tacos, or meal prep snacking!

- 1 ½ cups 4% fat cottage cheese
- 12-ounce bag of frozen fire-roasted corn, divided
- ¼ cup mayonnaise (optional)
- ½ teaspoon chili powder
- ½ teaspoon smoked paprika
- Zest and juice of 2 medium limes
- ½ teaspoon garlic powder
- ½ teaspoon fine sea salt, more to taste
- 2 tablespoons crumbled cotija cheese
- 2 tablespoons chopped fresh cilantro
- Optional: hot sauce or finely diced jalapeño
Instructions
- Thaw the corn according to package directions. If using canned or plain frozen corn, cook in a dry skillet over medium-high heat for 5-6 minutes to roast slightly.
- Blend the cottage cheese in a food processor or blender until smooth and creamy.
- Add 1/4 cup thawed corn, mayonnaise (if using), chili powder, smoked paprika, lime juice, garlic powder, and salt.
- Blend again until mostly smooth but with some texture remaining.
- Transfer the mixture to a bowl and stir in the remaining corn, cotija cheese, and chopped cilantro.
- Taste and adjust seasoning, adding hot sauce or diced jalapeño if desired.
- Serve chilled or at room temperature, garnished with extra cheese, cilantro, or a drizzle of hot sauce
