Ingredients
- Cheddar cheese- I prefer a sharp white cheddar cheese but any cheddar cheese is fine. For the smoothest dip, use a block of cheese and shred it in the food processor.
- Monterey Jack – Monterey Jack adds a slightly spicy flavor to the dip.
- Cream cheese– Low fat or regular cream cheese is fine.
- Dijon mustard– A little mustard adds a tangy flavor.
- Pale ale beer– I recommend a mild beer like Pabst Blue Ribbon.

Spicy Beer Cheese Dip – Add two tablespoons of pickled jalapeno peppers with a dash of hot sauce, or cayenne pepper to give it a spicy kick.
Gouda Beer Cheese Dip – Replace the cheddar cheese with Gouda cheese, to create a milder and sweeter flavor profile.
Mustard Beer Cheese Dip – Add a tablespoon or two of yellow or Dijon mustard to give the dip a tangy, mustardy flavor.
What to Serve with Beer Cheese Dip
This dip was delicious with mini pretzel twists but I also served it with toasted baguette slices and that was tasty, too! It would be perfect with a jumbo soft pretzel or you could scoop it up with pita chips or crackers. You could also try gluten free crackers but keep in mind that most beer is not gluten free.
How to Store Leftovers
Let the dip cool to room temperature: Do not put hot dip in the refrigerator as it can raise the temperature of the refrigerator and cause other food to spoil. Use a container with a tight-fitting lid to prevent air from entering and drying out the dip. Place the container in the refrigerator and store it for up to 5 days. To serve the dip again, reheat it in the microwave or on the stove until it is warm and creamy. Stir occasionally to prevent it from separating.

Instructions
- Add the cheddar cheese, Monterey jack cheese, cream cheese, and mustard to a blender or food processor.
- Pulse until combined.
- Add the beer and continue to blend until smooth.
- This dip can be served warm or cold. To serve warm, microwave in 30 second intervals, stirring between each time, until heated through.
