White Chicken Chili

Description

Gluten Free, Dairy Free Option

Creamy, hearty, white chicken chili is the perfect healthy comfort food for a cold night. Full of veggies and lots of protein.  It is also perfect for a busy night because it is made in the crockpot so it is ready for you when you get home!


Ingredients

Initial Ingredients:

  • 1.5 lb chicken breast (about 2 large or 3 medium breasts)
  • 2 and 3/4 cup chicken broth
  • 2 (15.5 oz) cans cannelini beans, rinsed and drained
  • 1 (15.5 oz) can pinto beans, rinsed and drained
  • 1 small yellow onion, diced
  • 2 (4 oz) can fire roasted green chilies 
  • 1 tsp (or two cloves) minced garlic
  • 1 tsp salt
  • 1/2 tsp white or black pepper
  • 2 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne
  • 1/4 tsp smoked paprika

Final Add-Ins:

  • 34 tsp fresh chopped cilantro
  • 1 cup plain greek yogurt
  • 1 tsp lime juice

Instructions

  1. Put all your initial ingredients in your crockpot.  Set to cook on low for 3-4 hours (it will just depend how long your chicken takes to cook through).
  2. Optional: take chicken out 2 ish hours in, shred, and put back.
  3. Optional: when cook time is over, remove 1/2 – 1 cup of your beans and veggies (not chicken!) and put in a food processor and blend.  This is totally optional but it helps make a thicker/creamier consistency.
  4. After returning puree to crockpot, or simply when cook time is up, add lime juice, chopped cilantro, and greek yogurt, stir until combined.
  5. Serve as-is, or with fritos, tortilla chips, and/or cheese and avocado! Any toppings you prefer 🙂

Notes

For a dairy free option, sub the greek yogurt with a dairy free cream cheese or plain yogurt.

To make it spicy: add a couple seeded and diced jalapeños, add more cayenne, or add hot sauce.
