Creamy, hearty, white chicken chili is the perfect healthy comfort food for a cold night. Full of veggies and lots of protein. It is also perfect for a busy night because it is made in the crockpot so it is ready for you when you get home!
There is not much I love more in this world than chili when it comes to cozy dinner recipes. And it is such a plus that this white chicken chili is a crockpot recipe so it is SO easy to make. AND it is full of great veggies and lots of protein. And to make it extra creamy I use a couple tricks that still make this a low fat option. So it is a comfort food you can feel good about!

Ingredients You Need for White Chicken Chili:
- Chicken breasts – duh! If you prefer you could also use ground turkey for this recipe. But you need to cook it before putting it in the crockpot.
- Beans – I use two cans of white beans and also add a can of pinto beans. The pinto beans might be a little untraditional, but I love a lot of beans in my chili and they are on the lighter side so they work 🙂 you can also omit them or add a third can of another bean!
- Onion & garlic – love the flavors both of these add!
- Chicken broth – gives us our liquid, otherwise it would be too thick
- Corn– for extra veggies!
- Green chiles – you could swap this with a couple jalapeños if you like your chili extra spicy!
- Lime juice – adds a little acidity to balance out all the creaminess
- Spices – we use a bunch in this recipe – salt, pepper, cumin, oregano, cayenne, paprika, and garlic powder. But they all add something special to the overall flavor!

- Cilantro – for that extra flavor! Don’t leave this out, trust me.
- Plain non-fat greek yogurt – this is how we make it creamy! But I love this option because it adds a lot of great protein and no fat!
Tips for the Perfect White Chicken Chili:
This crockpot chili recipe is so easy but here are a few tips to make sure you really nail it the first time:
- Shred the chicken mid cook – if you can – I like to do this so it can soak in all the juices. You want the chicken to be done cooking before you shred but usually at the 2 hour mark it is! It is not an issue if you cannot do this though.
- Puree some of the beans to make it extra creamy – I love pureeing about 1/2 – 1 cup of the mix (just not the chicken!) to make it extra creamy. This is also why I add a third can of beans, so you can do this without not having enough left over!
- Add the lime juice, cilantro, and yogurt after it is done cooking – trust me on this one. It doesn’t require extra effort, just throw them in at the end instead of the beginning!
- Feel free to play with the ingredients! If you dont like a lot of beans, dont use as many as I did. If you like it spicy, add more cayenne. Dont like onion? Leave it out! You can play around with it so you it fits you best!

Creamy, hearty, white chicken chili is the perfect healthy comfort food for a cold night. Full of veggies and lots of protein. It is also perfect for a busy night because it is made in the crockpot so it is ready for you when you get home!
Ingredients
Initial Ingredients:
- 1.5 lb chicken breast (about 2 large or 3 medium breasts)
- 2 and 3/4 cup chicken broth
- 2 (15.5 oz) cans cannelini beans, rinsed and drained
- 1 (15.5 oz) can pinto beans, rinsed and drained
- 1 small yellow onion, diced
- 2 (4 oz) can fire roasted green chilies
- 1 tsp (or two cloves) minced garlic
- 1 tsp salt
- 1/2 tsp white or black pepper
- 2 tsp cumin
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/4 tsp cayenne
- 1/4 tsp smoked paprika
Final Add-Ins:
- 3–4 tsp fresh chopped cilantro
- 1 cup plain greek yogurt
- 1 tsp lime juice
Instructions
- Put all your initial ingredients in your crockpot. Set to cook on low for 3-4 hours (it will just depend how long your chicken takes to cook through).
- Optional: take chicken out 2 ish hours in, shred, and put back.
- Optional: when cook time is over, remove 1/2 – 1 cup of your beans and veggies (not chicken!) and put in a food processor and blend. This is totally optional but it helps make a thicker/creamier consistency.
- After returning puree to crockpot, or simply when cook time is up, add lime juice, chopped cilantro, and greek yogurt, stir until combined.
- Serve as-is, or with fritos, tortilla chips, and/or cheese and avocado! Any toppings you prefer 🙂
Notes
For a dairy free option, sub the greek yogurt with a dairy free cream cheese or plain yogurt.
To make it spicy: add a couple seeded and diced jalapeños, add more cayenne, or add hot sauce.
