The Easiest Smores Brownies

Description

Gluten Free, Dairy Free

For when you don’t feel like baking from scratch, these SUPER easy smores brownies are a delicious time saver.  Made with a gluten free brownie mix, the easiest graham cracker crust you can make, and topped with lots of marshmallows and graham cracker crumbs to give you that campfire feeling in the comfort of your own home.


Ingredients

  • 1 box of brownie mix (I used Simple Mills)
  • Ingredients your brownie mix requires (mine was eggs, butter, and water.  You can also use oil for a dairy free version).
  • about 6-7 sheets of graham crackers
  • 1 cup + a handful of mini marshmallows


Instructions

  • Preheat oven to 375F (or whatever temperature your brownie mix box says).
  • Take a 8×8 baking dish and line with aluminum foil, and then spray with cooking spray
  • Line the pan with a layer of graham crackers (Mine fit 3 across and then one at the bottom and then you might need to break a 5th sheet to fill in the remaining space.  Don’t overthink it, you just want a complete layer of crackers).
  • Mix your brownie mix and add 1 cup of marshmallows to batter, combine well.
  • Pour brownie batter on top of graham cracker layer.
  • Crush your remaining graham crackers and spread on top of brownies (do NOT add your remaining marshmallows yet).
  • Bake for about 12 minutes.  You want the brownies to still be soft enough that you can push the marshmallows in them, but baked enough that you won’t burn your marshmallows.
  • When you hit that time, add in your marshmallows (press them in so they actually stick to the brownies and don’t just fall back off).
  • Bake until the brownies are set and the marshmallows have toasted (about 8-10 minutes more).  If your brownies are done but the marshmallows are not cooked at all, just broil for a few minutes to get them toasty.

Notes

For this to be gluten free you need to use a gluten free brownie mix and also graham crackers.  For this recipe to remain dairy free, use oil instead of butter if you are using the Simple Mills mix)
