Sweet Potato Buttercream Chocolate Frosting

Description

Gluten Free, Vegan, Refined Sugar Free

Frost your favorite baked goods with a creamy buttercream-like chocolate frosting that no one will ever guess was made with vegetables and no refined sugar.


Ingredients

Scale
  • 1 large sweet potato
  • 1/4 cup dairy free chocolate chips
  • 1/2 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 1 tbsp maple syrup
  • dash of sea salt

Instructions

  1. Skin sweet potato, poke it with holes, and microwave (wrapped in a paper towel) for five minutes.
  2. Once microwaved, slice sweet potato and immediately put it in your food processor (while it is still warm).
  3. Add the rest of your ingredients to the food processor, blend until smooth.
  4. Optional: taste and add more maple syrup if you want it sweeter.
  5. Top on everything or eat right off the spoon!

Notes

  1. You can also add water or dairy free milk if you want a thinner frosting.
  2. If you make and then refrigerate, take out for at least 20 minutes before trying to frost – it will be thick straight from the fridge
