Why I Love This Recipe

I love a dessert that sneaks in a little something good, and these brownies do exactly that. The sweet potato keeps them unbelievably moist and fudgy without any eggs or dairy, but you’d truly never guess it was in there.

Best of all, these come together with simple pantry ingredients and one bowl. There’s no fancy equipment, no melting chocolate, and no waiting for butter to soften. You just mash, mix, and bake. Sometimes I liked to add chocolate chips on top for even more chocolate flavor!

Ingredients & Substitutions

  • Sweet potatoes: These are the magic ingredient! They add moisture and richness so the brownies stay fudgy without eggs or dairy. You’ll cook and mash them, then measure out exactly one cup of cooled mashed sweet potato. Plain canned sweet potato puree works too, as long as it’s unsweetened.
  • Neutral oil: This keeps the brownies tender and rich. Use something mild like avocado, canola, or light olive oil.
  • Brown sugar: A little brown sugar adds sweetness and a soft, chewy texture. Coconut sugar works well if you want a deeper, more caramel-like flavor.
  • Maple syrup: This brings a little extra sweetness and moisture. You can reduce it slightly if you prefer a less-sweet brownie.
  • Vanilla extract: Just a splash rounds out the chocolate flavor.
  • Cocoa powder: This is what makes these taste like a real brownie. Use unsweetened cocoa powder for the richest chocolate flavor.
  • All-purpose flour: A little flour gives the brownies structure. For a gluten-free version, a 1:1 gluten-free baking flour works well as a swap.
  • Baking powder: This gives the brownies a little lift so they’re not too dense.
  • Salt: A pinch of salt brings out the brownies’ sweetness.

How to Make Sweet Potato Brownies

Tips for Perfect Brownies

  • Measure your sweet potato carefully. You want exactly one cup of mashed, cooled sweet potato so the batter has the right consistency.
  • Let the sweet potato cool before mixing. Adding it warm can change the texture of the batter.
  • Don’t overmix once the flour goes in. Stirring just until combined keeps the brownies tender and fudgy.
  • Be patient with the cooling time. These brownies continue to set as they cool, so slicing too early is the main reason they turn out too soft. Cooling completely gives you those clean, fudgy squares.

Variations

  • Swirl peanut butter into the top of the batter before baking for a peanut butter swirl. This trick works for boxed brownies, too!
  • Fold chopped walnuts or pecans into the batter for a little crunch.
  • Add 1/2 teaspoon of cinnamon for a warm, cozy flavor.
  • Stir in dairy-free chocolate chunks or chips for an extra-chocolatey double chocolate version. This is my personal favorite addition!

Storage

Store the brownies covered at room temperature for up to 3 days. For extra fudgy brownies, keep them in the refrigerator for up to 1 week. You can also freeze sliced brownies for up to 2 months. Just thaw at room temperature when you’re ready to enjoy them.

Frequently Asked Questions

  • Do the brownies taste like sweet potatoes? Not strongly. The sweet potato mainly adds moisture and richness, while the cocoa flavor stays dominant.
  • Can I roast the sweet potatoes instead? Yes. Roasting gives a slightly sweeter, deeper flavor.
  • Why are my brownies very soft? These brownies are naturally fudgy and continue to set as they cool, so give them time before slicing.
  • Can I use canned sweet potato puree? Yes, as long as it’s plain and unsweetened. Be sure there isn’t added water or liquid.
  • Should I refrigerate them? You can, especially if you like dense, fudgy brownies.
