Description
These s’mores cookie sandwiches are a fun twist on the classic treat! Made with a combination of soft, chewy cookies, creamy marshmallow frosting, and rich chocolate ganache, these cookies are sure to satisfy any sweet tooth.
Ingredients
- 1 ¾ cup all purpose flour
- ¾ cup ground graham crackers
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ¾ cup unsalted sweet cream butter (softened)
- 1 cup brown sugar
- ¼ cup sugar
- 3 tablespoons honey
- 1 egg
- 1 egg yolk
- 1 teaspoon pure vanilla extract
- 1 cup mini chocolate chips
Marshmallow frosting
- 8 large egg whites
- 2 cups sugar
- ½ teaspoon cream of tartar
- 2 teaspoon vanilla extract
Chocolate Ganache
- 1 cup chocolate chips
- ½ cup heavy whipping cream
- ¼ cup ground graham crackers
Instructions

Preheat oven to 350 degrees and line two cookie sheets with parchment paper

In a medium bowl, whisk the flour, graham cracker, baking soda, salt, and cinnamon until combined

Using a large bowl, beat the butter, brown sugar, sugar, egg, egg yolk and vanilla until combined and fluffy

Gradually beat in the dry ingredients until combined

Fold in the chocolate chips

Scoop about 3 tbsp of cookie dough and roll into a ball then place onto the cookie sheet and lightly press down into a disk

Bake in the oven for 8-10 minutes or until a light golden brown

Allow to cool
Prepaing the Ganache

Using a small pot, heat up the heavy whipping cream until simmering

Pour over the chocolate chips and whisk until smooth

Carefully dip the top of the cookies into the chocolate ganache and place onto the cookie sheet

Sprinkle some of the graham cracker onto the cookies

Allow the ganache to set while you make the marshmallow frosting
Preparing the Marshmallow Frosting

Place a medium pot of about 2 C water onto the stove and bring to a boil

Place the egg whites, sugar, and cream of tartar into a heatproof bowl and place over the boiling water

Whisk until the sugar has dissolved and the egg whites are warm to the touch

Pour the heated egg whites into a standing mixer bowl

Beat on high speed for 6 minutes

Beat in the vanilla and continue to beat until stiff peaks form

Scoop the frosting into a piping bag

Turn one cookie over and pipe a dollop of marshmallow frosting in the center of the cookie

Using a kitchen torch, toast the frosting

Place another cookie on top to create a sandwich
