If you love s’mores, then you’re going to fall head over heels for these s’mores cookie sandwiches. They are a twist on the classic campfire treat that we all know and love.

Making these cookies is a breeze, and you don’t need any special equipment. All you need is a few simple ingredients and an oven. The cookie dough comes together quickly, and once baked, it provides the perfect base for the marshmallow frosting and chocolate ganache.

To make the cookie dough, you’ll need a few pantry staples such as flour, ground graham crackers, baking soda, kosher salt, cinnamon, butter, sugars, honey, eggs, vanilla extract, and mini chocolate chips. Once you’ve mixed the ingredients together and baked them, you’ll be left with perfectly golden cookies.

Next up is the chocolate ganache, which is made by melting chocolate chips and mixing them with heavy whipping cream. The ganache is then used to coat the tops of the cookies before they are sprinkled with graham cracker crumbs.

The pièce de résistance of these cookies is the marshmallow frosting. Made with egg whites, sugar, cream of tartar, and vanilla extract, the frosting is light, fluffy, and perfectly sweet. After piping it onto one cookie, it’s torched to give it that classic campfire flavor.

Once the marshmallow frosting is toasted, another cookie is placed on top to create a sandwich, and voila – s’mores cookie sandwiches are born!

These cookies are perfect for any occasion, whether it’s a summer barbecue, a winter holiday party, or a casual afternoon snack. They are a fun and unique way to enjoy the flavors of s’mores in a bite-sized treat.

If you’re a fan of s’mores, chocolate, and cookies, then you have to try these s’mores cookie sandwiches. They’re easy to make, delicious to eat, and guaranteed to become a new favorite.
