The classic chocolate peanut butter combo we all love wrapped into a fluffy (healthy!) muffin that only requires one bowl and one banana to make!


Ingredients

Scale
  • 1 ripe banana
  • 1 egg
  • 1/3 cup unsweetened apple sauce
  • 1/4 cup brown sugar
  • 2 tbsp drippy peanut butter
  • 1/2 cup whole wheat flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 dark chocolate bar


Instructions

  1. Preheat oven to 375F.
  2. In a large mixing bowl, mash your banana realllly well – until no lumps remain and it is liquidy.  Add your egg, apple sauce, sugar, and peanut butter and mix until combined.
  3. Then add in your dry ingredients (flour, cocoa powder, baking soda and powder, salt) and stir just until combined (this is when you don’t want to overmix).
  4. Then chop up your chocolate bar and fold in just over half of the pieces into the batter.
  5. Pour evenly into greased or lined muffin tin about 3/4 full (this made 8 muffins for me) and then top with remaining chocolate chunks.
  6. Bake for 15 minutes until firm to the touch.

Notes

Make sure your chocolate bar does not have dairy in it if that is important to you!
