The classic chocolate peanut butter combo we all love wrapped into a fluffy (healthy!) muffin that only requires one bowl and one banana to make!
Who doesn’t love waking up to a good muffin to eat with their coffee?? Next time you have that one ripe banana on your counter, instead of making another loaf of banana bread try this instead! These chocolate peanut butter banana muffins are super fluffy and moist (sorry), they are made with ONE bowl, and you only need ONE banana!

Let’s Make Some Small Batch Chocolate Peanut Butter Banana Muffins!
Alrighty. The number one secret to muffins – don’t over-mix them. That is how you keep them light and fluffy. If you over-mix your batter they’ll become dense. Neat trick huh?
Second secret for these muffins in particular – your banana. Smash the heck out of it. Smash it up for a minute (I use a fork), and just when you think you have smashed it enough, smash it some more. You don’t want to leave lumps in this one, you want it to be super liquidy!
Next tip – Don’t over-bake. Every oven is a littttttle different but I baked these for exactly 15 minutes and they were perfect. Maybe check after 12 just to be sure – you can know they are done when they have risen, and they are “bouncy”/firm to the touch (and don’t feel like they are gooey inside).
Other than that it is pretty straightforward. I used a chocolate bar that I broke up, but you can use chocolate chips if you prefer. Just be sure to get all the good chocolate in there!

- a large bowl
- a fork (to mash banana and mix everything)

Ingredients
- 1 ripe banana
- 1 egg
- 1/3 cup unsweetened apple sauce
- 1/4 cup brown sugar
- 2 tbsp drippy peanut butter
- 1/2 cup whole wheat flour
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 dark chocolate bar
Instructions
- Preheat oven to 375F.
- In a large mixing bowl, mash your banana realllly well – until no lumps remain and it is liquidy. Add your egg, apple sauce, sugar, and peanut butter and mix until combined.
- Then add in your dry ingredients (flour, cocoa powder, baking soda and powder, salt) and stir just until combined (this is when you don’t want to overmix).
- Then chop up your chocolate bar and fold in just over half of the pieces into the batter.
- Pour evenly into greased or lined muffin tin about 3/4 full (this made 8 muffins for me) and then top with remaining chocolate chunks.
- Bake for 15 minutes until firm to the touch.
Notes
Make sure your chocolate bar does not have dairy in it if that is important to you!
