Gluten Free, Vegan, Refined Sugar Free
When dessert is too good to share. This single serve apple crisp has a filling of warm spiced apples topped with a crunchy granola crunch. You’d never guess it’s gluten free, vegan, and refined sugar free. I might suggest making a double batch just to be safe. You will thank me 😉
Ingredients
Filling:
- 3/4 cup sliced apple
- 1 tbsp coconut sugar
- 1/2 tbsp coconut flour
- 1/4 tsp cinnamon*
- 1/8 tsp nutmeg*
- splash of vanilla
Topping:
- 1/4 cup granola
- 1 tbsp vegan butter
- 1/2 tbsp coconut sugar
- 1/2 tbsp coconut flour
- 1/4 tsp cinnamon
- dash of salt
Instructions
- Dice your apples into thin slices/small cubes (you can peel them first but I like to just leave the skins on!). In a small bowl, combine with the rest of the filling ingredients and transfer to an oven safe dish (I used a small 7 oz ramekin).
- In a separate bowl, combine all of your topping ingredients (microwave the butter first). Stir until evenly coated with spices and with butter.
- Top your filling with your granola mixture.
- Bake at 375F for 30 minutes.
Notes
*OR you can do a heaping 1/4 tsp of apple pie spice
Use a gluten free granola to keep this gluten free
Just double the recipe to make it for two! I used a 7oz ramekin for the single serve, and a 16oz ramekin for the sharing size 🙂
