These roasted carrots are the perfect way to effortlessly elevate any dinner party. Pair them with a tahini sauce for a great sweet and savory flavor combination.
Ingredients
Scale
Carrots:
- 1 or 2 bunches of full size carrots (about six or twelve)
- Salt and pepper to taste
- Avocado or olive oil
Lemon Garlic Tahini Sauce:
- 1/4 cup tahini
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp oregano
- 2.5 tbsp water
Peanut Butter Tahini Sauce
- 2 tbsp nut butter
- 2 tbsp tahini
- ½ tsp apple cider vinegar
- 1 tbsp olive oil
Instructions
- Preheat oven to 400F.
- Clean carrots and remove leaves. Lay on a greased baking sheet. Spray with avocado or additional olive oil and season with salt and pepper.
- Bake until soft (35 minutes for smaller carrots, 45 minutes for larger).
- While carrots bake, make sauce(s): combine all ingredients in a small bowl and whisk until combined.
- When carrots are done, drizzle sauce over top and enjoy.
