These unique pumpkin churro donuts combine the comforting flavors of pumpkin spice and the crispy, sugary goodness of churros into a delectable, autumn-inspired dessert.

For the donuts
- 1 cup all purpose flour
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup vanilla yogurt
- 2 Tablespoons butter – melted
- 1 egg
- 1/2 cup of pumpkin puree
- 1 teaspoon of cinnamon
- 1/2 teaspoon of pumpkin pie spice
For the topping
- 1 cup granulated sugar
- 1 Tablespoon cinnamon
Instructions
- Place the flour, brown sugar, salt, and baking powder in a large bowl, and mix well.
- In the mixing bowl of a stand mixer, add the yogurt, melted butter, egg, pumpkin puree, cinnamon, and pumpkin pie spice, and blend altogether, until smooth.
- Add the flour mixture to the mixer, and mix to combine.
- In a separate bowl, mix the sugar and cinnamon together until well blended.
- Brush the donut pan with melted butter, and pour the batter into the molds.
- Bake at 350 degrees for 19-21 minutes.
- When the donuts are baked, remove them from the oven to cool slightly.
- When the donuts are cool to the touch, remove them from the pan, and brush them with butter, and dip into the cinnamon sugar mixture. Place them on waxed paper to cool and set.
