Gluten Free & Vegan Options
Rice krispies got a festive flavor with peppermint chocolate added in. Makes these an easy no bake option to put on your holiday food to make list. One bite feels like diving in to your favorite hot cocoa!
Ingredients

- 5 cups rice cereal
- one (10 oz) bag of mini marshmallows
- 2 tablespoons milk (or butter for a richer flavor)
- 1/3 cup mint chocolate chips
- 1/4 teaspoon peppermint extract
Instructions
- Set aside 1/2 cup of marshamllows.
- Then take the rest of the bag and combine it with the milk in a large pot over medium heat, stir well, until everything is melted.
- Remove from heat and add the peppermint extract and chocolate chips, stir until everything is melted together.
- Add in cereal, stir until evenly coated, and then add in remaining marshmallows, and stir until evenly dispersed.
- Pour the cereal mixture into an 8×8 baking pan lined with parchment paper. Using your fingers (you can dip in water to not stick), gently press into the pan. Leave on counter to set.
Notes
For a vegan option, use vegan marshmallows, almond milk, and chocolate chips.
For a gluten free option, use gluten free rice cereal.
