NO BAKE Key Lime Pie Bars

Description

Gluten Free, Vegan, and Refined Sugar Free Options in Notes

No bake key lime pie bars are made with coconut cream paired with a graham cracker crust to create a decadent treat in an easier and healthier way.  Gluten free and vegan options available.


Ingredients

Graham Cracker Crust:

  • 2 cups graham cracker crumbs (took 10 sheets of crackers)
  • 8 tbsp salted butter, melted
  • 1/3 cup cane sugar

Key Lime Topping:

  • 2 (13.5oz) cans coconut cream, drained
  • 1/2 cup key lime juice (about 15 key limes)
  • OR 1/2 cup lime juice (about 2 limes)
  • 1/3 cup cane sugar
  • Key lime zest (or lime zest)

Instructions

Graham Cracker Crust:

  1. Take about ten sheets of graham cracker cookies and blend in food processor to pulse into crumbs.
  2. Combine crumbs, melted butter, and sugar in a large mixing bowl and stir until well combined.
  3. Pat crust down in a 8×8 square pan lined with parchment paper (make sure the paper is sticking out of the edges on two sides so you can pull it to get these out of the pan after they are frozen!)
  4. Set aside while you make topping.

Key Lime Topping:

  1. Zest key limes and keep in a small bowl.
  2. After zesting, cut in half and juice using a citrus juicer.
  3. Drain the liquid from the coconut cream cans and set aside for another use.
  4. Combine the cream, key lime juice, and sugar in a mixing bowl and stir to combine.
  5. Pour in pan over crust and top with lime zest.
  6. Freeze for at least two hours before serving.  (I froze overnight and just took it out about 20 minutes before I wanted to serve it).

Notes

Gluten Free/Vegan option: all you need to do to make this both gluten free and vegan is use one of my other no bake crusts!  You can find examples in my no bake pumpkin spice cheesecake or my no bake pbj bars.

Refined Sugar Free option – use one of the crusts mentioned in the above note, and swap out the cane sugar in the filling for Stevia, agave, or maple syrup.
