PB&J Granola Bars (No Bake)

This pbj granola bar recipe is far from your average granola bar.  This healthy snack is filled with protein to keep you full, flavors that will make you happy, and ingredients you can feel good about.  They are gluten free, refined sugar free, and have a vegan friendly option.

This is not your average granola bar recipe and these are going to change the way you think about a traditional pb&j.  A perfect chewy texture, loaded with yummy toppings, and anything but boring – these are a delicious treat that is actually made with nutritious ingredients so you can feel good about eating it for breakfast, as an afternoon pick-me-up, or even a midnight snack!

Let’s Make This PBJ Granola Bar Recipe!

First we start with the crust.  All you have to do is mix a few ingredients together in your food processor.  If you are looking for a vegan option, you can swap the honey out for another sweetener like agave or maple syrup, or check out the crust recipe from my mini mango cheesecakes or pumpkin spice cheesecakes.

I use my homemade raspberry chia jam in this recipe because I think homemade jam is just the best.  IF you are using this, ideally you’d make it the night before to give it time to really thicken.  If you don’t have that kind of time, if you make it an hour or so beforehand it will be fine, or check out my Amazon shop where you can find store bought jams that aren’t ridden with sugar and icky additives.  Always check your ingredients!

In addition to the ingredients listed, you will need:

  • a food processor or high speed blender
  • parchment paper
  • an 8.5×8.5  inch baking dish
  • access to a freezer
  • a spoon and/or knife

Gluten Free, Dairy Free, Refined Sugar Free, Vegan Option

This pbj granola bar recipe is far from your average granola bar.  This healthy snack is filled with protein to keep you full, flavors that will make you happy, and ingredients you can feel good about.  They are gluten free, refined sugar free, and have a vegan friendly option.


Ingredients

Scale

Crust:

  • 1/2 cup nut butter of choice
  • 1 cup dates
  • 3/4 cup gluten free oats
  • 2 tbsp honey

Topping:


Instructions

Crust:

  1. Blend all ingredients together in food processor.
  2. Form into a ball, then flatten into an 8.5×8.5 square dish lined with parchment paper.
  3. Put in freezer for 30 minutes to harden.

Topping:

  1. Cover entire crust with a thin layer of jam.
  2. Drip ½ tsp dollops of nut butter spaced evenly throughout the top.
  3. Blend together with a knife or back of spoon.
  4. Sprinkle crushed peanuts on top.

Notes

Steps 2 & 3 under topping are just to make a fun swirl of nut butter (like in the photos).  You can apply toppings however you prefer

Vegan Option: all you need to do to make this vegan is swap the honey in the crust for agave or maple syrup.
