These cookie bars combine a soft chewy cookie crust and a thick layer of fudgy chocolate and require no baking so are ready in a pinch!
Ingredients
Scale
Cookie Crust:
- 2 cups Goodie Girl Magical Animal Crackers
- 12 whole pitted dates
Chocolate fudge layer:
- 1 (15oz) can chickpeas, drained and rinsed
- 2 tbsp cocoa powder
- 1/4 cup + 2 tbsp cashew butter
- 1/2 cup cashew milk
- 1 tbsp organic stevia
- Goodie Girl Magical Animal Cracker crumbs
Instructions
Crust:
- Combine ingredients together in food processor and blend until dough forms.
- Flatten into the bottom of an 8×8 baking sheet lined with parchment paper.
Chocolate:
- Optional: remove skins from chickpeas (this is kind of tedious but I always do it).
- Combine all ingredients (minus cookie crumbs) together in a food processor and blend until combined.
- Fold in cookie crumbs.
- Spread evenly on top of cookie crust.
- Optional: freeze for 2 hours and remove from freezer 20 minutes before serving
Notes
Freezing is an optional step because the topping is solid enough to stay up on its own, however it is the consistency of a thick frosting so if you want it to be more like one solid bar, I recommend freezing.
