These cookie bars combine a soft chewy cookie crust and a thick layer of fudgy chocolate that no one will ever imagine is healthy.  And NO BAKE so they are perfect to whip up on short notice!

Ever since trying Goodie Girl’s Magical Animal Crackers in my lighter banana pudding I have been absolutely hooked. They are essentially a gluten free, cleaner version of my favorite childhood snack – what’s not to love?? And I am a firm believer that all foods can fit in a healthy lifestyle so there is no reason to cut out something that makes you happy.  I don’t go a day without dessert myself!  In particular – chocolate desserts.

So that is why I decided to make these NO BAKE chocolate fudge cookie bars.  I love a good no bake dessert, like my cacao espresso no bake cookies or this no bake fruit tart.  It makes life so much easier!  And it is nice for these summer months when you don’t want to turn on your oven and make your entire house hotter than it already is!

Let’s Make Some Chocolate Fudge Cookie Bars!

This recipe is SUPER easy.  For the crust all you need are these cookies and some dates!  If you don’t think the crust is sticky enough, just add more dates and pulse until you do.

I used cashew butter in this recipe and I really think it makes a difference.  Cashew butter is probably the creamiest nut butter I have ever tried.  BUT that being said I am sure it will be just as great with any nut butter that you have on hand!

Lastly, you can make the topping without stevia first and then decide if you want to add it in.  I personally think it tasted fine without it, but I know some people like sweeter treats! And stevia is one of the safest options when it comes to sweeteners (you could also use coconut sugar, maple syrup, or agave).

These cookie bars combine a soft chewy cookie crust and a thick layer of fudgy chocolate and require no baking so are ready in a pinch!


Ingredients

Cookie Crust:

Chocolate fudge layer:


Instructions

Crust:

  1. Combine ingredients together in food processor and blend until dough forms.
  2. Flatten into the bottom of an 8×8 baking sheet lined with parchment paper.

Chocolate:

  1. Optional: remove skins from chickpeas (this is kind of tedious but I always do it).
  2. Combine all ingredients (minus cookie crumbs) together in a food processor and blend until combined.
  3. Fold in cookie crumbs.
  4. Spread evenly on top of cookie crust.
  5. Optional: freeze for 2 hours and remove from freezer 20 minutes before serving

Notes

Freezing is an optional step because the topping is solid enough to stay up on its own, however it is the consistency of a thick frosting so if you want it to be more like one solid bar, I recommend freezing.
