I love fettuccine alfredo and I was excited to make it when we had some friends visiting. My friend Annie is gluten-free so I wanted to make a dish we could all enjoy. It took a little tweaking to figure out how to adapt a traditional fettuccine alfredo recipe and keep it gluten-free but this worked perfectly! This is now in our regular dinner rotation and I know you’ll love it!

  • Salted butter: Unsalted works too, just bump the salt up a pinch at the end. In a pinch, olive oil will do, but you’ll lose some of that rich flavor.
  • Garlic: Fresh really is best here, but ½ teaspoon of garlic powder works if that’s what you’ve got. Skip the jarred stuff if you can (it tends to taste a little flat).
  • Heavy whipping cream: This is what makes the sauce silky, so I’d stick with it. Half and half will work but the sauce will be thinner, so let it simmer a minute or two longer. Full-fat canned coconut milk is the best dairy-free swap.
  • Parmesan cheese: Grate it yourself if you can, since the pre-shredded kind has anti-caking agents that keep it from melting smoothly. Pecorino Romano is a great swap, just go a little lighter on the salt since it’s saltier.
  • Black pepper: Freshly cracked if you have it.
  • Salt: Parmesan is already salty, so taste before adding more.
  • Reserved pasta water: Don’t skip this! The starch helps the sauce cling to the pasta. If you forgot to save some, a splash of warm water or broth works.

For the pasta:

  • 12 oz gluten-free fettuccine
  • Salt for the pasta water

For the sauce:

  • 4 tablespoons salted butter
  • 2 cloves garlic, finely minced
  • 1 cup heavy whipping cream
  • 1 cup freshly grated Parmesan cheese
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt, or to taste
  • 24 tablespoons reserved pasta water, as needed


Instructions

1. Bring a large pot of generously salted water to a boil. Cook the gluten-free fettuccine according to the package directions until al dente. Before draining, reserve ½ cup of the pasta water. Drain the pasta and set aside. Do not rinse.

2. While the pasta cooks, melt the butter in a large skillet over medium-low heat. Add the minced garlic and cook for 30-60 seconds, just until fragrant. Do not allow the garlic to brown.

3. Pour in the heavy cream and bring it to a gentle simmer. Cook for 3-4 minutes, stirring occasionally.

4. Reduce the heat to low. Gradually add the freshly grated Parmesan, whisking continuously until the cheese has melted and the sauce is smooth.

5. Add the black pepper and taste before adding salt. The salted butter and Parmesan may provide enough salt on their own.

6. Add the cooked fettuccine directly to the skillet. Using tongs, gently toss the pasta until it is completely coated in the Alfredo sauce.

TIP: If the sauce is too thick, add the reserved pasta water 1 tablespoon at a time, tossing after each addition, until the sauce reaches your desired consistency.

7. Serve immediately with additional Parmesan and freshly cracked black pepper. Add fresh parsley, if desired.

Notes

Use freshly grated Parmesan. It melts more smoothly and gives the sauce a better texture.

Keep the heat low when adding Parmesan. High heat can cause the cheese and cream to separate.

Don’t skip the reserved pasta water. You may not need all of it, but having it available makes it easy to adjust the sauce.

Serve immediately. Alfredo sauce is at its creamiest when freshly made.
