Gluten Free, Dairy Free, Refined Sugar Free
These cashew butter cookies are flourless, made with only three ingredients, are refined sugar free, and taste just like eating your favorite cashew butter straight out of the jar – only better!
Ingredients
Required:
- 3/4 cup cashew butter
- 1 egg
- chocolate chips to taste
Optional:
- 1/8 tsp salt
- 1/2 tbsp stevia
Instructions
- Preheat oven to 350F.
- Combine all ingredients together in a mixing bowl and stir until well combined.
- Using a cookie scooper or spoon, create small balls of dough. Flatten out on a cookie sheet lined with parchment paper and cook for 10 minutes.
Notes
I never usually measure chocolate chips, just use as many as you like! Also be sure to check the ingredients in your chocolate chips to ensure they are both dairy free and refined sugar free if those are important to you. I recommend this brand.
I haven’t tried this with other nut butters, but I assume it would work the same way – if you try let me know!
