Alright so raise your hand if you are as obsessed with Georgia Grinders cashew butter as I am. I know I can’t see you but I also know you are raising your hand if you have ever tried it. If not I encourage you to do so. It is a little on the expensive side but I promise it is worth every last penny. This stuff is so creamy, so delicious, and made with only the good stuff. No added oils or sugar, just cashews and a little sea salt.
And this recipe takes fullll advantage of that deliciousness. We don’t add any flour to these cookies, or any unnecessary ingredients. So you get the full taste of cashew butter in every single bite. YUM. Let’s get to it.
Let’s Make Some Cashew Butter Cookies!
I know it is scary when a recipe calls for this much of your jar of nut butter – believe me I am usually hesitant too. But don’t worry because I promise this one is worth it! So first we need 3/4 cup of cashew butter. This won’t be an entire jar, but it will be most of it. I always use Georgia Grinders. It is actually the only brand of cashew butter I have ever tried! If you have another you love I am all ears but this one is pretty fantastic.
Then all you really need is an egg and your chocolate chips. I always like adding a little salt to my cookies but you don’t have to if you want these to be as simple as possible. And of course you can add stevia (or another sweetener) if you want them a little sweeter – but again this is up to you and not necessary!
Just be sure to use dark chocolate chips and check ingredients on them if you want to keep this dairy free and refined sugar free- my favorite brand is this one.
I used a little cookie scooper and this made like 20 small cookies for me. I always like making smaller cookies because it makes me feel like I can eat more of them 😛 but you can make them any size you want – just may have to bake them a little longer.
But that’s about it – told ya it was easy peasy!

Ingredients
Required:
- 3/4 cup cashew butter
- 1 egg
- chocolate chips to taste
Optional:
- 1/8 tsp salt
- 1/2 tbsp stevia
Instructions
- Preheat oven to 350F.
- Combine all ingredients together in a mixing bowl and stir until well combined.
- Using a cookie scooper or spoon, create small balls of dough. Flatten out on a cookie sheet lined with parchment paper and cook for 10 minutes.
Notes
I never usually measure chocolate chips, just use as many as you like! Also be sure to check the ingredients in your chocolate chips to ensure they are both dairy free and refined sugar free if those are important to you. I recommend this brand.
I haven’t tried this with other nut butters, but I assume it would work the same way – if you try let me know!
