Gluten Free, Vegan, Refined Sugar Free
Fresh veggies, herbs, a little olive oil, and about five minutes is all it takes to have the most refreshing side dish at your kitchen table!
Ingredients
Scale
Salad:
- 2 cucumbers
- 4 plum tomatoes
- 1/2 red onion
- 1 bell pepper (we used red)
Dressing:
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp oregano
- 1 tsp dill
- 1/2 tsp salt
- 1/2 tsp pepper
- Fresh basil and parsley
Instructions
- Dice your cucumber, pepper, and tomatoes (de-seeded) and combine in a large bowl.
- Slice your red onion and add with other veggies.
- Make sauce by whisking all ingredients together, and then pouring over veggies.
Notes
I think this is best after letting it sit for at least a couple hours to marinade in the dressing!
