Description

Gluten Free, Vegan, Refined Sugar Free

Fresh veggies, herbs, a little olive oil, and about five minutes is all it takes to have the most refreshing side dish at your kitchen table!


Ingredients

Scale

Salad:

  • 2 cucumbers
  • 4 plum tomatoes
  • 1/2 red onion
  • 1 bell pepper (we used red)

Dressing:

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 1 tsp dill
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Fresh basil and parsley


Instructions

  1. Dice your cucumber, pepper, and tomatoes (de-seeded) and combine in a large bowl.
  2. Slice your red onion and add with other veggies.
  3. Make sauce by whisking all ingredients together, and then pouring over veggies.

Notes

I think this is best after letting it sit for at least a couple hours to marinade in the dressing!
