I love a good light salad full of my favorite veggies in summertime. And this one packs a great flavor and SO many great nutrients are in this dish thanks to all of the different veggies and herbs! The best part is you can always play with the ingredients and swap for your favorite veggies and add more or different herbs as you please!

Let’s Make a Cucumber Tomato Salad!
Seriously if you can chop veggies and whisk some oil, you are good to go on this one. We used plum tomatoes and a red bell pepper but you could always swap that for your favorite tomato (just make sure they’re firm) and a different bell pepper to add some extra colors to this dish!
For the dressing, the most important part is the base – using oil and red wine vinegar. I love the vinegar to give it a little tang. And then if you don’t have something listed or prefer something else you can always swap out the herbs!
My one recommendation is to make this the day before you want it. I think letting the veggies marinade in the dressing overnight really brings out the flavors. And you can always add feta cheese if that is your thing (not really mine) or some grilled chicken to make this a complete meal!
In addition to the listed ingredients, you will need:

Ingredients
Salad:
- 2 cucumbers
- 4 plum tomatoes
- 1/2 red onion
- 1 bell pepper (we used red)
Dressing:
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp oregano
- 1 tsp dill
- 1/2 tsp salt
- 1/2 tsp pepper
- Fresh basil and parsley
Instructions
- Dice your cucumber, pepper, and tomatoes (de-seeded) and combine in a large bowl.
- Slice your red onion and add with other veggies.
- Make sauce by whisking all ingredients together, and then pouring over veggies.
Notes
I think this is best after letting it sit for at least a couple hours to marinade in the dressing!
