Gluten Free, Vegan, & Refined Sugar Free Options
Your classic chocolate bark, but better. White chocolate mixed with peppermint extract and rice cereal gives this crispy peppermint bark a little something extra. Don’t forget to top with crushed candy cane for that festive feel!
Ingredients
- One (9 oz) bag of white chocolate
- 1/2 tsp peppermint extract
- 1/2 cup rice cereal
- 3 candy canes, crushed
Instructions
- Melt your chocolate in a microwave safe bowl in 30 second increments, careful not to burn.
- Once melted, mix in your peppermint extract, and then your rice cereal.
- Spread the mixture out on a large cookie sheet lined with parchment paper, spread with a rubber spatula until it is pretty thin (it won’t reach the edges).
- Sprinkle your candy cane on top and let solidify (can either do this in the fridge or leave it on the counter)
- Once solidified, break into pieces and enjoy!
Notes
For a gluten free option – use rice cereal that is certified gluten free. I recommend One Degree Organics brown rice crisps.
For a vegan option – swap white chocolate with a dark chocolate that does not contain dairy
For a refined sugar free option – omit candy cane. (you can top with other festive items like dried cranberries and pumpkin seeds!)
