Sweet & Spicy Creole Sheet Pan Dinner

Sweet and spicy roasted vegetables with seasoned chicken sausage come together for the perfect one pan dinner that is ready in 30 minutes!


Ingredients

Scale
  • 4 links of chicken sausage
  • 1 large head of broccoli (about 4 cups)
  • 2 small sweet potatoes
  • 2 tbsp hot honey
  • 1 tsp water
  • Creole seasoning to taste


Instructions

  1. Preheat oven to 425 F.
  2. Chop the chicken sausage into about 1/2 inch slices, the broccoli into small florets, and the sweet potato into small cubes (see photos for reference).
  3. Take the sweet potato, and put in a large bowl on its own.  In a small cup, whisk together the hot honey and water.  Pour this mixture over the potatoes and toss until evenly coated.  Spread the potatoes out on a greased cookie sheet and put in the oven for 10 minutes.
  4. In a separate bowl, combine the sausage and broccoli, spray with some olive or avocado oil, and then toss with creole seasoning to taste.
  5. After ten minutes, add these to the sheet pan and cook for another 20 minutes, until sweet potato is soft, broccoli is starting to brown, and sausage is warm (you can flip everything halfway through if you want the most even cooking – although I did not do this)
