Say hello to the best brownie you will ever meet and goodbye to all of the dessert guilt. These cookies n cream brownies are fudgy and decadent, but are made with clean ingredients and are completely gluten free. Best served a little warm with a glass of milk.
Ingredients

- 1 and 1/4 cup almond flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 3 eggs, room temperature
- 1/3 cup chocolate chips
- 3/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 1 box Trader Joe’s Gluten Free Joe Joe’s
Instructions
- Preheat oven to 375F.
- Combine all dry ingredients together in a bowl (flour through salt).
- Combine the eggs and coconut sugar together in a separate bowl, whisk until creamed. Then melt your chocolate chips and coconut oil. Let cool slightly before adding to egg mixture so you don’t heat the eggs to much. Stir all wet ingredients until mixed.
- Add dry ingredients to wet, stirring just until combined.
- In a food processor, pulse chop your entire box of Joe Joe’s. Take half (or a little more) and fold this into your batter.
- Pour batter into an 8×8 baking dish lined with parchment paper.
- Top with the remaining chopped cookies.
- Bake until a toothpick comes out clean, about 25-30 minutes.
Notes
No food processor? Pour all of your cookies into a plastic bag and crush by hand! (it is kinda fun 🙂 )
