For the donuts:
- 1 ½ C flour
- 1 ½ tsp baking powder
- ½ tsp. baking soda
- ¾ C light brown sugar (packed)
- 2 large eggs
- ¾ C buttermilk
- 3 tbsp unsalted butter (melted)
- 1 C Pureed Blueberries (1 C fresh blueberries)
- 1 tsp pure vanilla extract
- 1 tsp apple pie spice
Streusel Topping:
- 12 tbsp unsalted butter (softened)
- ⅔ C sugar
- 1 ½ C flour
Vanilla glaze :
- 1 C powdered sugar
- 2–3 tbsp whole milk
- 2 tsp vanilla extract
Instructions
For the Donuts
- Preheat oven to 350 degrees and spay a doughnut pan with pam baking spray
- Using a food processor or blender, puree the 1 C of blueberries and set aside
- Using a medium bowl, whisk together the flour, baking powder, baking
- soda, and apple pie spice
- Using a large bowl, whisk together the eggs, sugar, buttermilk, melted
- butter and vanilla
- Gradually whisk in the dry ingredients into the wet until combined
- Fold in the pureed blueberries
- Scoop the batter into the piping bag
- Fill the doughnut cavity with the batter
- Bake in the oven for 11-13 minutes or until a light golden brown
- Remove from oven and allow to cool
- Remove the doughnuts from the pan and place onto a wire rack
Directions for the streusel topping:
- Combine all ingredients into a medium bowl
- Using your finger, work the mixture into a coarse like crumble
- Set aside
Make the glaze:
- Using a medium bowl, whisk all ingredients until combined
- Directions for the doughnuts:
- Dip the top of the doughnut into the glaze and place onto the wire rack
- Sprinkle some streusel on top
- Enjoy!
