  • 1 ½ C flour
  • 1 ½ tsp baking powder
  • ½ tsp. baking soda
  • ¾ C light brown sugar (packed)
  • 2 large eggs
  • ¾ C buttermilk
  • 3 tbsp unsalted butter (melted)
  • 1 C Pureed Blueberries (1 C fresh blueberries)
  • 1 tsp pure vanilla extract
  • 1 tsp apple pie spice

Streusel Topping:

  • 12 tbsp unsalted butter (softened)
  • C sugar
  • 1 ½ C flour

Vanilla glaze :

  • 1 C powdered sugar
  • 23 tbsp whole milk
  • 2 tsp vanilla extract
 

Instructions

For the Donuts

  1. Preheat oven to 350 degrees and spay a doughnut pan with pam baking spray
  2. Using a food processor or blender, puree the 1 C of blueberries and set aside
  3. Using a medium bowl, whisk together the flour, baking powder, baking
  4. soda, and apple pie spice
  5. Using a large bowl, whisk together the eggs, sugar, buttermilk, melted
  6. butter and vanilla
  7. Gradually whisk in the dry ingredients into the wet until combined
  8. Fold in the pureed blueberries
  9. Scoop the batter into the piping bag
  10. Fill the doughnut cavity with the batter
  11. Bake in the oven for 11-13 minutes or until a light golden brown
  12. Remove from oven and allow to cool
  13. Remove the doughnuts from the pan and place onto a wire rack
