This one-pan baked mushroom stroganoff is so creamy and delicious, you won’t believe how easy it is! Everything cooks in the oven, even the noodles!

- 3 cups beef broth
- 2 cups sliced mushrooms
- 8 oz egg noodles
- 1 cup sour cream
- Salt & pepper to taste
Instructions
- Preheat oven to 425 degrees.
- In a large 9×13 casserole dish, combine vegetable broth, mushrooms and egg noodles, stir until combined. Season with salt and pepper.
- Cover with aluminum foil and bake for 40 minutes.
- Remove from the oven and let the noodles cool slightly. It’s important to let the noodles cool before adding the sour cream so that it doesn’t curdle.
- Stir in the sour cream. The mixture will thicken as it cools.
