Description

Gluten Free, Dairy Free, Refined Sugar Free

This watermelon coconut mocktail is so fresh and refreshing, perfect for a hot summer day.  It is made with only three ingredients, has no added sugar, and you can add your favorite liquor to turn it in to your new favorite cocktail!


Ingredients

Scale
  • 1 (heaping) cup watermelon chunks
  • 3/4 cup coconut water*
  • 1/2 tsp lime juice
  • Optional: splash of club soda
  • Optional: 1oz liquor of choice! (probably best with vodka, gin, or tequila)

Instructions

  1. In a food processor or blender, blend your watermelon.
  2. Strain with a metal mesh strainer and keep juice, you can discard the pulp.
  3. Mix watermelon juice with coconut water and lime, stir and serve on ice!
  4. Optional: Top with club soda for some bubbles.
  5. Optional:  Mix in 1oz of your favorite alcohol to have a refreshing cocktail! (add alcohol and mix or shake before adding club soda).

Be sure to read labels on your coconut water and pick one that has no added sugar!
