Gluten Free, Refined Sugar Free, Vegan Option

Your favorite stir fry veggies, a flavorful Asian sauce with an (optional) kick and chickpea noodles come together to bring you a pasta dish like none other that is incredibly tasty, secretly healthy, and completely satisfying! 


Ingredients

Scale
  • 8oz rotini pasta (or other short pasta)
  • 1 tablespoon avocado oil or vegetable oil
  • 12oz frozen stir fry veggies

For the sauce:

  • 1/2 cup soy sauce
  • 1/4 cup teriyaki sauce
  • 1 teaspoon garlic powder
  • 2 teaspoons sesame oil
  • 1 teaspoon honey
  • 1/2 teaspoon crushed red pepper flakes (optional)


Instructions

  1. Make the pasta according to the package directions.
  2. In a large skillet, add the oil and heat over medium-high heat for 30 seconds.
  3. Add the vegetables and stir fry for 2-3 minutes until vegetables are bright in color and tender.
  4. In a small bowl, whisk together the soy sauce, teriyaki sauce, garlic powder, sesame oil, and honey until combined.
  5. Reduce heat on the veggies to medium and add the sauce and pasta.
  6. Stir fry over medium, heat until veggies reach desired tenderness.
  7. Top with red pepper flakes if you like extra spice!

Notes

Vegan option – omit honey.  Or if you still want an extra sweet and spicy flavor omit honey and sub with 1/2 tsp agave and 1/2 tsp sriracha

You can sub the soy sauce for tamari or coconut aminos. 

I used Banza chickpea pasta but you can sub for any noodles you prefer.  Just use around 8oz of pasta.

Any stir fry veggies will work also! 

Taste the sauce when you are done mixing – you can always add more honey if you want a spicier sauce or more sesame oil if you want that flavor more apparent!
