Gluten Free, Dairy Free, Refined Sugar Free
A chocolate lover’s dream. This TRIPLE chocolate avocado zucchini bread is soft, moist, and decadent but made with great ingredients that you will not feel guilty about!
Ingredients

- 1 ripe avocado
- 1 medium zucchini, grated (should be about 1.5 cups)
- 2 eggs
- 2 tbsp agave
- 3 tbsp unsweetened apple sauce
- 1 cup gluten free all purpose flour
- 1/2 cup chickpea flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- dash of salt
- 1 bar of dairy free chocolate (I used this one)
- Dairy free chocolate chips
Instructions
- Preheat oven to 375F.
- Shred your zucchini and set aside.
- In a large bowl, mash avocado until no lumps remain.
- Add agave, apple sauce and eggs to avocado and mix.
- Add zucchini to wet in ingredients.
- In another bowl, combine all dry ingredients and mix to combine (both flours, cocoa powder, baking soda, salt)
- Take 1/2 of the bar of chocolate and melt in the microwave. Once melted, stir into wet ingredients.
- Add dry ingredients to wet and stir until combined.
- Fold in chocolate chips.
- Break the rest of the chocolate bar into chunks and top the loaf with them.
- Pour into a greased bread pan, and bake for 40-45 minutes until a toothpick comes out clean.
Notes
Use dairy free chocolate brand to keep recipe dairy free. I recommend my favorite brand on my Amazon shop.
Also check your chocolate chips for sugar if you want this to be refined sugar free. There are a lot of dark chocolates out there without any!
