Toffee Chocolate Chip Cookies

Description

The combination of sticky toffee bits with vanilla and brown sugar make these Toffee Chocolate Chip Cookies a total hit!


Ingredients

Scale
  • 1 cup butter
  • 1 cup brown sugar
  • ⅔ cup sugar
  • 2 eggs (save the yolks)
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 2 ¼ cups flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup chocolate (chopped)
  • 8 oz toffee bits


Instructions

  1. In the bowl of a stand mixer fitted with a paddle attachment, add the butter, brown sugar and sugar.
  2. Beat together on high speed for 1 minute. Add in the eggs and egg yolks and cream together for 30 seconds.
  3. Add in the vanilla and butter flavoring and mix to combine. Add in the flour, and top with salt, baking soda and baking powder. Beat together just until combined.
  4. Fold in the chopped chocolate and toffee bits. Cover and place in the fridge to chill for 30 minutes.
  5. Preheat the oven to 350 F.
  6. Line a baking sheet with parchment paper.
  7. Spoon out 2 Tbs sized balls of dough and place onto the baking sheet leaving at least 2” of space between them.
  8. Place into the preheated oven to bake for 12 minutes or until the edges have just begun to start browning. Remove from the oven and place onto a cooling rack to cool slightly before serving.
