Gluten Free, Dairy Free, Refined Sugar Free
These sweet potato protein waffles are gluten free, flourless, refined sugar free, and full of plant based protein and pure deliciousness! Enjoy a stack for breakfast or scoop some ice cream over a warm one for dessert!
Ingredients

- 3 tablespoons mashed sweet potato
- 2 eggs
- 5 tablespoons vanilla protein powder
- 1 tablespoon water
Instructions
- If you need to prepare your sweet potato, just take about 1/2 a large one and poke some holes in it, wrap it in a damp paper towel, and microwave for 5 minutes. Then peel and mash, measure out 3 tbsp, and set aside the rest for another use (like my sweet potato breakfast bowl!)
- Combine all of your ingredients together in a bowl and stir until combined.
- Cook on your waffle maker according to directions (don’t forget to spray with coconut or avocado oil so they don’t stick!)
