Description

Gluten Free, Dairy Free, Refined Sugar Free

These sweet potato protein waffles are gluten free, flourless, refined sugar free, and full of plant based protein and pure deliciousness!  Enjoy a stack for breakfast or scoop some ice cream over a warm one for dessert!


Ingredients

Scale
  • 3 tablespoons mashed sweet potato
  • 2 eggs
  • 5 tablespoons vanilla protein powder
  • 1 tablespoon water

Instructions

  1. If you need to prepare your sweet potato, just take about 1/2 a large one and poke some holes in it, wrap it in a damp paper towel, and microwave for 5 minutes.  Then peel and mash, measure out 3 tbsp, and set aside the rest for another use (like my sweet potato breakfast bowl!)
  2. Combine all of your ingredients together in a bowl and stir until combined.
  3. Cook on your waffle maker according to directions (don’t forget to spray with coconut or avocado oil so they don’t stick!)
