Gluten Free, Dairy Free, Refined Sugar Free

This sweet potato mug cake is the perfect dessert when you are baking for one or for two.  It is gluten free, protein packed, made with actual sweet potato and full of great nutrients, but it tastes like the best dessert you’ve ever had.


Ingredients

Scale
  • 6 tablespoons mashed sweet potato
  • 2 eggs
  • 1/4 cup almond flour
  • 1 scoop (25g) vanilla collagen or protein powder or additional coconut sugar
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Mini chocolate chips to taste


Instructions

  1. Take a sweet potato, poke holes in it, wrap it in a damp paper towel and microwave for 5 minutes.  When done (be careful it’ll be hot), cut in half and scoop out flesh and mash with a fork. Measure out 6 tablespoons to use, keep the rest for another recipe.
  2. Take your sweet potato and combine it with the rest of your ingredients (except chocolate chips) in a large mixing bowl, stirring until well combined.  Fold in chocolate chips.
  3. Pour batter evenly into two ramekins, or microwave safe mugs.
  4. Microwave each, separately, for 80 seconds.  Enjoy!
