Gluten Free, Dairy Free, Refined Sugar Free
This sweet potato kale hash makes for a great homemade brunch and an equally satisfying quick dinner. Made with lots of veggies and topped with a fried egg- it is light yet filling and really satisfying too!
Ingredients
Scale
- 1/2 a big bag of kale
- 2 large sweet potatoes – diced
- 1 red onion – diced
- 1/2 tbsp minced garlic
- Salt and pepper to taste
- Eggs
- Optional: cayenne for some spice!
- Optional: Everything But the Bagel seasoning for your eggs
Instructions
- Saute sweet potatoes and onions on a pan over medium heat for 7 minutes until they start to soften.
- Add in garlic and cook until fragrant.
- Add in a few tablespoons of water and cover for about 5 minutes.
- Add kale and cook until tender. Season with salt and pepper.
- Fry and egg to desired doneness (I like to add Trader Joe’s ebtb seasoning) and serve on top!
Notes
I definitely like this with a runny egg yolk – it adds a little something! But if you don’t like runny yolks you can cook your egg until it is done.
Can add other veggies if you’d like! We have added bell peppers and jalapenos before.
